Moringa oleifera leaves also known as Remungai leaves, are widely utilized in culinary and industrial applications. They are rich in phenolic compounds, with a quercetin amount of 43.74 % which holds significant health benefits. In line with the World Health Organization’s acknowledgement of human interest in the uses of herb plants, this study explores Microwave-Assisted Extraction (MAE) of Moringa oleifera leaves with ethanol as co-solvent, contributing to the refinement of extraction processes for potential medicinal applications. The aim of this work is to extract phenolic compounds from Moringa oleifera leaves using MAE with ethanol as a co-solvent. The effects of different concentrations of ethanol (0, 20, 40, 60, and 80 wt.%) and microwave temperatures (30, 35, 40, 45 and 50 ℃) towards the extraction yield were investigated by analysing the phenolic compounds and antioxidant activity. The antioxidant activity and phenolic compound were analysed by using a UV-Vis Spectrophotometer. The extraction yield of quercetin at optimum ethanol concentration and the temperature was determined using high-performance liquid chromatography (HPLC). The best result shows the amount of total phenolic compound of 123.05 ± 0.030 mg GAE/g, an antioxidant activity of 75.62 ± 0.043 % and 39.35 %w/w yield of quercetin in Moringa oleifera leaves extract was obtained at 40 wt.% ethanol concentration and temperature of 45 ℃. The collected data revealed a significant quercetin yield of 39.35 wt.%, surpassing results from previous studies. Thus, this study proved that MAE with the presence of ethanol as a co-solvent is an efficient solution to extract phenolic compounds in Moringa oleifera leaves for further industrial applications.
