Pineapple waste is abundant in many substances that can utilised for creating novel and cutting-edge technologies, food, medicine, nutraceuticals, biogas, and bioethanol production. The aim of the present work was to isolate bioactive compound from pineapple peel waste by green process, characterize the extracted compounds, and assess antioxidant and antibacterial activity of liquid soaps containing the extract. Dried and powdered pineapple peel was magnetically agitated for 24 h to extract its bioactives. Analysis by FTIR confirmed the existence of polyphenols and flavonoids and their characteristic functional groups, including hydroxyl, alkyne and carbonyl groups. The total phenolic content (TPC) of the extract was determined to be 0.0000922 mg GAE/g, indicating relatively good antioxidant activity. Next, antioxidant activity of the pineapple peel extract was measured by the Methylene Blue assay, which demonstrated moderate activity and that of the control orange peel extract, strong activity. Formulae for soap including pineapple peel extract, especially that incorporating acetic acid, displayed strong anti-bacterial activity against Escherichia coli and Staphylococcus aureus, with the use of acetic acid-based soap being the most potent. The soap pH was basic, which is consistent with its cleaning properties. This work highlights the possible applications of pineapple peel as a new, sustainable (Eco-friendly) and promising natural antioxidant and antimicrobial source, with applications in eco-friendly soap applications.
