Subject(s): Dissertation note: Thesis (Master of Science) -- Universiti Malaysia Pahang - 2025 Abstract: has high oxidative stability when used for frying. However, repeatedly heated palm oil leads to chemical deterioration which can lead to the formation of compounds that are dangerous to the human body which are called free fatty acids. Consumers know that repeatedly heated cooking oil is harmful to the human body but most people do not know how many times cooking oil can be used. Currently, there are not many options to determine the level of free fatty acid. The current technology requires a high cost of equipment. In this research, the open path optical method was chosen to determine the level of free fatty acid in the palm cooking oil. The open path optical method was chosen because this technique does not change the chemical properties of the sample as no other chemical is added to the sample. The objective of this study is to analyze the absorbance spectrum of repeatedly heated palm oil and identify the optimum wavelength for free fatty acid study. Besides that, to determine the relationship between the concentration of free fatty acid and the absorbance and to verify the reading of the absorbance spectrum using an oil test strip. A light source and a spectrometer were used in this research with the help of the Spectrasuite software. The prepared sample was heated cooking oil that was heated for a different duration. The samples were poured into a cuvette then the cuvette was placed inside the setup to obtain the absorbance spectrum of each sample. The experiment result shows that the sample that was heated for the longest duration displays the highest absorbance compared to the other prepared samples. Specifically, the absorbance of each sample is increased by 0.02% - 0.04% compared to the unheated oil cooking palm. In this research, at the wavelength of 364 nm was identified as the optimum wavelength to assess the concentration of the FFA. The absorbance spectrum and concentration of free fatty acid are different if the heating duration is different as discussed in the studies. The result produced from the open-path optical method was compared with a chemical test, demonstrating that the accuracy of this method is comparable to that of commercial oil test strips.
