It gives sour taste and pungent smell and mostly used as vinegar. The global demand for acetic acid is around 6.5 million tonnes per year. Currently, acetic acid is produced by synthetic process which brings to the highest utilization of energy and cost. Thus, the biological process was introduced and being used for this research with banana stem waste (BSW) as raw material and microbes to convert glucose into acetic acid. Throughout these, a research has come out with several objectives on acetic acid production by BSW. The objectives of this research were to isolate and identify Enterobacter sp. from mixed culture of soil that produces acetic acid using BSW to study the kinetic production of acetic acid in anaerobic degradation of BSW and Enterobacter sp..In order to achieve the better result and to prove the objectives, there were scopes needed to focus on. Firstly, the research was started with the revival of pure culture from soil. Then, fermentation was carried out anaerobically in a batch mode. From the screening, there were five microbes obtained that can produce acetic acid. One of the best acetic producers was determined using biochemical test and found that Enterobacter soli was the best producer of acetic acid in anaerobic environment and the last was determination of kinetic parameter. Growth profile was conducted and kinetic of Enterobacter soli was determined using Monod Model. The optimum condition obtained from this batch fermentation studies was at temperature of 30°C and agitation speed of 150rpm. From the kinetic studies, the specific growth rate,µ obtained was 0.016h-1 from BSW concentration. Meanwhile, in glucose medium, the maximum specific growth rate (µmax) was 0.27h-1. The maximum product yield (YAa) from BSW medium was 0.042g acetic acid/g BSW. The maximum product yield from synthetic glucose medium was 1.39 g acetic acid/g glucose. The maximum cell yield for BSW was 3.10 g cell/g BSW meanwhile in synthetic glucose medium was 34.48g cell/g glucose.
