This research delves into the utilization of chitosan nanoparticles as stabilizers for Pickering emulsion containing eugenol essential oil. Pickering emulsions, known for their stability and compatibility with biological systems, have garnered significant interest across diverse applications. Chitosan, a naturally occurring polysaccharide, is explored for its potential in stabilizing emulsions owing to its amphiphilic properties and film-forming capabilities. The study focuses on elucidating the interfacial interactions between eugenol essential oil droplets and chitosan nanoparticles, examining their collaborative impact on emulsion stability. The experimental methodology involves the meticulous preparation of Pickering emulsion through controlled mixing, incorporating varying concentrations of chitosan nanoparticles. Characterization techniques, including dynamic light scattering will be employed to assess particle size, surface charge, and morphological aspects of the resulting emulsions. Depending upon the process condition, the optimum condition for chitosan is 0.2 (w/v) or 20% in 100ml with 11.2 nm for particle size while 0.325 for PDI. The varies of eugenol concentration were also observed through analysis such as particle size, FTIR, poly-diversity index (PDI) and antioxidant inhibition (%) analysis. Then, the selection of optimum concentration of eugenol is 0.4 (v/v) or 40% eugenol in 100ml was based on comprehensive analysis as the result demonstrated favorable outcomes in terms of particle size (average size: 50 - 80 nm) uniformity for 3 weeks period, exhibited distinctive functional groups in FTIR analysis, and showcased superior antioxidant activity with 94.6%, making it an optimal choice for the intended application. Thus, the outcomes seek to provide valuable insights into the potential applications of chitosan-stabilized Pickering emulsions containing eugenol essential oil, particularly in industries such as food packaging. In short, the biocompatible nature of nanochitosan particles to encapsulate the eugenol enhances the appeal of these Pickering emulsions, stability, prolonged release, and improved antioxidant activity properties for sustainable and environmentally friendly formulations.
