Microwave-Assisted Extraction (MAE), a sophisticated distillation has lately gained significant attention for the extraction of essential oils from medicinal plants and herbs due to its affordability and environmentally friendly nature. In that case, this study is conducted to investigate the potential of MAE performed when essential oils are extracted from Fenugreek seed and to compare it with Soxhlet extraction method. To maximise the oil production from the extraction process, the effects of three key variables, which are microwave power, extraction duration, and water to raw material ratio were examined. Using both the MAE and Soxhlet methods, the optimal condition has determined based on its highest yield from fenugreek seed. By using MAE, the maximal yield of oil from fenugreek seeds was produced at a shorter extraction time without significantly changing their chemical composition and obtained more chemical compound compare to the conventional method which is Soxhlet extraction method that requiring more time to extract, energy and heat for the extraction. This has demonstrated MAE as a financially viable approach and be anticipated to provide significant value to the essential oil production industry. Thus, the MAE method is more effective in terms of extraction than Soxhlet extraction method.
