Seaweeds have been widely employed in food and used as ingredients in animal feed for their ability as source of hydrocolloid. Nowadays, animal feed plays an important and crucial role in food industries, which enable economic production of animal proteins in the world. The feed industry plays a very important role in the feed production by producing quality feed pellets that give effects on high feed intake, reduce of feed wastage and energy use for feed consumption and better on intestinal function. Therefore, animals that received a complete diet in a good pelleted form, the growth and feed efficiency will be improve significantly. The present study involved the investigation of chemical and physicochemical composition of seaweed, determination of pelleted feed quality and effects towards growth performance, carcass quality and sensory evaluation of broiler chicken fed with seaweeds in the formulation. Kappaphycus alvarzeii and Sargassum polycystum. Proximate, amino acid, fatty acid, major elements and trace elements, total phenolic compound (TPC), swelling capacity (SWC), water retention capacity (WRC), oil retention capacity (ORC), gel strength and viscosity were identified in this study. It was found that S. polycystum contained high crude protein (9.9-14.1 %DW) and crude fibre (39.8 %DW) than K. alvarezii. As for the physicochemical properties of the seaweeds, their swelling capacity (SWC) varied from 13.33 to 35.83 mL/g, water retention capacity (WRC) ranged from 8.18 to 10.59 g/g DW and oil retention capacity (ORC) 2.68 to 3.32 g/g DW, respectively. Both seaweeds had high in minerals and well-balanced amino acid profiles. Based on the nutrient information, feed formulations for broiler chicken with both seaweed inclusions at different dietary levels (2, 5 and 10 %) were prepared. The pelleted feeds were analysed on its chemical and physical analysis followed by animal study which was performed as part of this thesis. Based on physical analysis result, pellet quality (PDI and hardness) was observed better in 5 % S. polycystum diets, which reflected on better results of feed intake (FI) on birds. In broiler feeding trial, growth performance of birds with different seaweed diets did not show any adverse effects (P> 0.05). Following this, carcass evaluation was conducted on day 36 this study showed that inclusion of both seaweeds in broiler’s diet has no significant effect on carcass traits. Meanwhile, thiobarbituric reactive substance (TBARS) was conducted on meat from different types of feed and showed that up to 10 % of S. polycystum inclusion in diets for broiler chicken had improved inhibition of lipid oxidation in meat, as compared to negative control sample and K. alvarezii fed broiler. In the sensory test of cooked meat that had been executed among Universiti Malaysia Pahang’s students, overall acceptance of sensory indicated that there was no significant difference (P> 0.05) detected among treatments. In overall, S. polycystum did showed high content of protein and crude fibre and showed better in feed conversion ratio (FCR) value followed by K. alvarezii.
